Delicious Healthy “Fried” Quinoa (Can Be Made Vegan With Omission of Egg)

I’m not going to bother you with some long paragraph about nothing but I will say that this is super delicious and that the entire dish (which is a lot, by the way) never lasts more than 24 hours in our home every time I make it!

Delicious Healthy Fried Quinoa
INGREDIENTS:
2 tablespoons coconut oil
2 eggs, scrambled
2 cloves garlic, minced
1 small onion, diced
Some mushrooms, sliced
1 squash, chopped
1 zucchini, chopped
1 cup frozen peas
Some baby carrots, chopped
3 cups cooked quinoa
1 tablespoon fresh grated ginger
3 tablespoons Braggs liquid aminos
*When serving you could top with sliced green onions and Sriracha (that’s what the original recipe called for)
DIRECTIONS:
Heat 1 tablespoon coconut oil and then add your scrambled eggs (I mixed mine with a little unsweetened vanilla almond milk so that they would be fluffy). Just let them cook and I used a spatula to break them up once they were done. Set aside.
Then heat 1 tablespoon coconut oil in a large skillet/pan/wok over medium high heat.
Add garlic and onion, and cook, stirring often, until onions become translucent (approx. 4-5 minutes).
Add mushrooms, squash and zucchini.
Stir constantly to cook until veggies are tender (approx. 3-4 minutes).
Add peas, carrots and quinoa. Stir constantly for about 2 minutes.
Add ginger and aminos and mix everything for about another 2 minutes. Stir in eggs (and green onions if you like) and then top with Sriracha for an extra kick.
