Green Vegan Spinach and Kale Pancakes

Happy Monday!!

I have been waiting to post a recipe for when I made something super yummy. But then I realized that I should post a pancake recipe as my first recipe. After all I squat for them, right ? I have tried several healthy pancake recipes and these are by far my favorite. I love them because the are green and delicious. If I can make something green with a vegetable then it just makes me feel better about stuffing my face with it. These are vegan with the right protein powder. So without further ado- I give you my green pancake recipe !

 

Green Vegan Spinach and Kale Pancakes
Makes approximately 9 4″ pancakes (yes- we are hungry people)

– 1 cup oat flour
– 1 cup whole wheat unbleached flour
– 2 scoops protein powder (I used Isopure’s Creamy Vanilla- which isn’t Vegan)
– 2 tsp baking soda
– 2 tsp baking powder
– 1 TBLSP pumpkin pie spice

– 2 tsp apple cider vinegar
– 1.5 cups almond milk
– 2 tsp coconut oil (melted)

– 1 ripe banana
– 2 cups spinach
– 2 cups kale

Mix all the dry ingredients in a bowl (I added the oats first and blended them. Then I added the other dry ingredients and turned on the blender to combine). Mix all the wet ingredients. Pour wet into the dry and blend again. Once everything is mixed together break apart a banana and drop into the blender. Top off with the spinach and kale and blend again until everything is mixed and the batter is a thick and somewhat smooth (depends on how fine your oats are) consistency.

Warm a pan or your griddle over low heat. This varies however I have found that 2-3 works well for my stovetop. Melt enough coconut oil to cover the pan with a layer of oil. Then drop a little more than 1/4 of a cup of batter into the middle of your heated surface. Once the top of the pancake starts to bubble try to slide a spatula underneath to see if it is cooked enough to flip. If so flip it over and wait for 2-3 minutes and check to see if it is cooked.
