Recipe! VEGAN Apple Cinnamon Pancakes!

Looking for a yummy healthy VEGAN pancake with some fall weather flavor? You’re just a bowl, some mixing and a little wait time away.

 

INGREDIENTS

  • 1 flax egg (1 tablespoon of ground flax seeds + 3 tablespoons of water)
  • 1.5 cups of spelt flour
  • 1 serving of vanilla plant based protein
  • 1 tablespoon of baking powder
  • 1 tablespoon of ground cinnamon
  • 1/2 teaspoon of sea salt
  • 1.5 cups of almond/soy/coconut milk
  • 1/4 cup apple sauce
  • 1 tablespoon of melted coconut oil (plus more for greasing pan)
  • 1/2 teaspoon vanilla extract
  • 1 organic apple cut into cubes

 

EQUIPMENT

  • Large bowl to mix everything
  • Non-stick pan to cook
  • Measuring spoons

 

HOW-TO

  1. Mix your flax egg first. It needs time to form into a gel like consistency
  2. Add dry ingredients (flour, protein powder, baking powder, cinnamon and salt) to your bowl and mix together
  3. Add in the wet ingredients (non-dairy milk, apple sauce, coconut oil, vanilla) and combine
  4. Throw in the apple cubes
  5. Put just a little bit of coconut oil in your pan and put it on over low-medium heat
  6. Ladle out about 1/4 cup sized amount of batter
  7. When you see bubbles, flip
  8. Repeat until your tummy’s content
