Crispy Coconut Waffles

Sometimes I get waffles and their just like bread. Other times they just don’t taste good. So I did some research and experimenting and ended up with these delicious mouthgasams. Crispy on the outside, fluffy on the inside and oh-so tasty. High in fat but so I suggest making them as a reward for sticking to your macros haha.

Crispy Coconut Waffles

Ingredients:
– 2 cups of almond flour
– 1 cup of tapioca or arrowroot starch
– 1/4 cup of coconut sugar (OPTIONAL)
– 1/2 teaspoon sea salt
– 2 organic, pasture raised eggs 🐣
– 1/2 grassfed ghee or coconut oil (melted)
– 1 cup coconut milk – 2 teaspoons fresh squeeze lemon juice 🍋
– 1 teaspoon vanilla extract

Method:
1. Preheat waffle iron
2. Combine all ingredients and gently mix
3. Using a measuring cup or ladle
4. Cook waffles according to the waffle maker’s instructions
5. Eat ASAP or let cool on a wire rack
These tasty treats can be frozen once cooled for a quick breakfast!

The jam is a homemade concoction of organic cranberries, oranges and some apple sauce cooked over low heat. Super good. No added sugar necessary. Adjust quantity to your liking if you want it to taste more like 1 ingredient than another
